Many island residents are familiar with wine pairing dinners that are frequently held at various venues around the island, but at Stacked at Ozo in Chaweng you can experience something slightly different. The new Cocktail paring dinners, now an ongoing feature of the Stacked dining experience.
Between world renowned mixologist and mixulstant, Joseph Boroski, who was at Stacked this month and resident Chef Matthew Rubin heavenly combinations of flavors and tastes of both dishes and cocktails have been created in their new and exciting cocktail pairing menus.
The Samui Times headed down to Stacked to give two of the new menus a try and we were certainly not disappointed, in fact we were blown away!
We started out with the 3 Stack Salad, a superb combination of Watermelon, Spanish Manchego Cheese, Fresh Lemon, Almond, Balsamic Crème and Citrus Vinaigrette. This fresh and exciting dish was bursting with flavors and textures and matched perfectly with the vibrant Lemongrass Daiquiri of White Rum, Crushed Lemongrass, Homemade Lemongrass Syrup, Brown Sugar and Lime.
Senses awakened we then indulged in Beef Cheek, 2 day Braise, Sour Cream & Chive Mash, Root Vegetable and Natural Jus which again perfectly paired with the Bash and Battered Cocktail of Crushed Blueberry, Blended Scotch, Fresh Lime, Ginger, Hibiscus, Pomegranate and Soda that hit spots that we were previously unaware we had!
The grand finale of the menu was the Warm Apple Crumble with Fresh Baked Apples, Raisins and Vanilla Bean Ice Cream that was served with the Island Fashioned Bourbon with Finger root, Galangal, Thai Basi and Bird Chili, this warm and comforting cocktail has just the right amount of spice to give you a quick blast of heat before leaving you feeling you have shared a warm embrace. For those who are not so partial to a little spice the Mango Margarita Float that brings all the joys of a traditional Margarita with a big scoop of fresh mango sorbet to give it that sweet tropical kick also pairs perfectly with this dish.
If you are partial to local tastes then menu two provides Thod Man Pla a Thai Fishcake with Pea Sprout & Cucumber Salad and homemade chili sauce, when combined with the Smooth Sailing cocktail of Vodka, Fresh Green Mango, Pineapple, Lime and Homemade Hibiscus Grenadine you have a taste combination that is unique, exciting, vibrant and really brings your senses to life!
The main course on the second menu combines 2x Duck a dish of Pan Roasted Breast and Confit Leg with White Bean Puree, Smoked Bacon, Wilted Rocked, Almond, Black & Gold Raisin and Demi-glace with the Nicely Stacked cocktail of Gin, Raspberry, Fresh Lemon, Watermelon and Cinnamon Bark.
The icing on the cake to this menu was the Pecan Pie with Bourbon Caramel and Vanilla Custard paired with a cocktail called Old Fashioned that lovingly combines Bourbon, Angostura, Brown Sugar, Lice and Orange oil or if you prefer – Your Dad’s Cookies & Milk a smooth and comforting blend of Fresh Baked Walnut Chocolate Chip Cookies, Vanilla, Rum & Caramel Milkshake!
