Green curry with Chicken

Here is a simple recipe for Thai Green Curry that will certainly impress your dinner guests!


1/2 Chicken breast

1 tablespoon green curry paste

250 ml Coconut milk

20 grams diced Pumpkin

20 grams diced Carrots

20 grams String Beans, cut into 1-inch pieces

2 small green Egg Plants, cut

1 tablespoon brown sugar or palm sugar

1 tablespoon Fish sauce,

2 sprigs Sweet Basil

1 small Red Chilli,

Place half the coconut milk into a frying pan. Add the green curry paste. Fry at medium heat. Add the chicken, pumpkin, carrots string beans and egg plant. Season with fish sauce and sugar. Let the curry boil for 5 minutes without stirring. Garnish with Red Chilli & Sweet basil
