Koh Samui’s luxury pool villa resort and spa, Conrad Koh Samui, unveils its top F&B talents that will be flying its flag at Hilton Worldwide’s inaugural F&B Masters Asia Pacific2015. The country-level competition will be held at the Millennium Hilton Bangkok between 13 and 20 December.
F&B Masters Asia Pacific 2015 is an internal competition by Hilton Worldwide, which invites team members from properties across Asia Pacific to participate and showcase their skills and creativity in food and beverage. This is the first time the competition extends to Asia Pacific; last year, it was open only to Hilton Worldwide properties in Southeast Asia and India. The competition is divided into five “cups”, namely Culinary, Bar, Barista, Sommelier and Pastry.
Stefano Ruzza, general manager, Conrad Koh Samui said, “We are proud to have such high calibre team members representing our hotel at the country-wide competition. From the beginning of this year’s competition, we selected and trained our team members to be ready so that they will present the uniqueness of Koh Samui’s tropical island to the world”.
Here, the talents Conrad Koh Samui is fielding for the country finals in December:
Culinary Cup: Mr. Averut Charuchai (Commis) is a young and energetic team member who enjoys cooking and is always happy to see guests enjoying the dish he serves. At the competition, he will present his favorite creations ‘Fresh Mango with Prawn Carpaccio’ for the starter and ‘Roasted Lamb with Massaman Sauce’ for the main course. These two contemporary dishes represent well ‘Touches of Thai’ using Thailand’s famous fruit, Mango, and the Massaman sauce – Massaman curry has been voted as one of the World’s Top 10 Best Food.
Barista Cup: Ms. Praweena Thamma (Restaurant Supervisor) always has a big friendly-smile on her face. She is one of the resort’s opening team members whom Conrad Koh Samui is proud of. She learned how to make a coffee recently and has a passion to create her own recipe, using her favorite cherry, hence the name of the drink, ‘Cherry-Lover Coffee’. By saying that the combination of sweet red cherry goes well with the aroma coffee and fresh milk, she is proud that guests love the ‘Cherry Cream’ made from fresh cherry, specially created for this menu.
Bar Cup and Sommelier Cup: Mr. Mathaphat Tongkamchum (Senior Bartender) won two prizes at the hotel level competition and will represent Conrad Koh Samui at both Bar Cup and Sommelier Cup competitions. With six-year experience working at some of luxury hotels and resort’s premium lounges and bars, he creates the signature cocktails namely ‘The Secret of Zalacca’ using one of southern Thailand’s tropical fruits, Salak, perfectly blended with rum and whisky to create a unique and aromatic refreshing drink. Joining the sommelier cup, he is very excited as he has just started to learn about wine and will challenge himself to do his best at the competition.
Pastry Cup: Mr. Kawinwat Thongborisut (Cook Helper) has just started his career in the kitchen and joined the resort’s team for almost two years. He is passionate about making delicious and beautiful dessert menu with guidance from his supervisor and resort’s Pastry Chef. Some of his signature creations include: Royal Chocolate Cake, Taro Cheese Cake, and the incredible-delicious Mango fusion Coconut.
