Conrad Koh Samui appoints Nicolas Piatti as Executive Chef

Award – winning chef Nicolas Piatti is the new Executive Chef at the Conrad Koh Samui. Nicolas, who holds dual Italian and Argentine nationality, was previously Executive Chef at the Hilton Bogotá Cundinamarca in Colombia.

From 2012 to 2015 he held the same role at the Hilton Resort & Spa, Papagayo, Costa Rica and he also spent six years at the Four Seasons Resort Costa Rica. Earlier in his career he worked at restaurants in Argentina, Italy and Spain. Nicolas, 40, received an Americas F&B Excellence Award in 2017 and he was named Hilton’s Chef of the Year for the Americas in 2018 in an awards scheme that embraced some 350 Conrad, Waldorf Astoria and Hilton properties.
He also received the title of ‘Food Waste Champion for Americas’ in a company pilot project. The award recognised his outstanding achievement in reducing food waste at the Hilton Bogotá Cundinamarca in Bogota. Conrad Koh Samui General Manager Ruben Gabino said, “Our hotel enjoys a fantastic reputation for luxury accommodation and innovative cuisine. Nicolas brings an added dimension to our three restaurants with his vast experience and proven expertise in international fine dining.”
