Masuman Beef Stew

This wonderful stew is Indian in origin and will bring you authentic Southern Thai flavors.


1 teaspoon of brown sugar

2 cups of chopped onions

1 cup flour

1 teaspoon of ground black pepper

1 stalk of lemon grass

2 teaspoons of salt

1lb of boneless chicken

2 tablespoons of vegetable oil

2 cloves of garlic

2 tablespoons of red chili paste

1 tin of whole tomatoes

2 cups of diced carrots or pumpkin

2 cups of diced peeled potatoes

1 cup of beef stock

½ teaspoon of ground cardamons

½ teaspoon of cinnamon

Mix 1 teaspoon of salt, pepper, lemon grass and the flour in a shallow dish and coat the beef in the mixture. Heat the oil in a large pot on a medium heat and add the rest of the salt, the onions and the sugar and stir until the onions are soft. Then add the chili paste and garlic and stir for two minutes before adding the beef and continue to cook until the beef is browned. Stir in the rest of the ingredients, bring to the boil before reducing the heat and simmering for 35 minutes.

Serve with either rice or noodles
