Pad Thai Noodles with Prawn
This sweet, salty and sour dish is a Thai favorite that is easy to cook and a delight to serve to guests
Ingredients
Noodles
1/3 cup of tamarind juice
2 tablespoons of fish sauce
2 tablespoons of rice vinegar
½ tablespoon of paprika
2 tablespoons of vegetable oil
2 tablespoons of sugar
1 tablespoon of minced garlic
½ kilo of prawns
1 beaten egg
½ cup of bean sprouts
½ cup of unsalted chopped peanuts
Chopped fresh cilantro
Lime wedges
Boil a large pot of water and add the noodles and cook until tender but still slightly firm, approx 3 – 5 minutes, drain well and put to one side. Mix the tamarind juice, fish sauce, paprika, sugar and vinegar together in a bowl. Heat a large skillet on a medium to high heat and add the garlic, cook for 30 seconds before adding the prawns and cook until pink. Put to one side and then scramble the egg in the skillet. Add the tamarind mixture to the noodles and stir over the heat for 1 minute and then place on a platter. Add the remaining ingredients, sprinkle with bean sprouts, peanuts and cilantro and serve with lime wedges
